There is something comforting about chocolate. There is a reason why people crave it and consider themselves chocoholics. Imagine pure milk chocolate melting on your tongue or the richness of dark chocolate. The warmth of a steaming cup of hot cocoa during a winter storm or a cool chocolate ice cream cone on a hot summer’s day.
On this day, I was craving chocolate. This week’s baking adventure was chocolate cupcakes with peanut butter frosting. .
The recipe began by pouring boiling water into 1/2 a cup of cocoa and allowing to cool. In another bowl, I whisked flour, baking powder and salt together and set aside until needed.
Using the mixer, butter and sugar were beaten until light and fluffy, then 2 eggs were added, one at a time. Once the mixture was smooth, vanilla was poured in. I then added the flour mixture and let the mixer continue just until the flour was well incorporated. The cocoa was then mixed in by hand. The batter was then poured into a lined muffin tin and baked at 350 degrees for 25 minutes.
The frosting consists of butter, peanut butter, icing sugar and vanilla whipped until light and fluffy. I was feeling lazy so I just free-handed the frosting and garnished each cupcake with a mini peanut butter cup. =)
