Sponge Cake? Check.
Put them all together and you have a yogurt mousse cake!
Step 1 – Bake the Hot Milk Sponge Cake
Step 2 – Make the Yogurt Mousse
Comprised of cream, water, gelatin, sugar and yogurt, we begin by whipping the cream until soft peaks form. The gelatin is melted over a hot water bath. As that melted, we blended together the yogurt and sugar which was then mixed with the gelatin. At last, we added the whipped cream, a little at a time and then some orange and raspberry flavouring.
Step 3 – Assemble the Cake
We cut the sponge cake to fit the bottom of a cake ring. On top of the sponge we layered thinly sliced peaches and then some of the yogurt mousse. These steps were repeated once more and then the cake was placed in the blast chiller for 1 hour.
Step 4 – Finishing the cake
After 1 hour the cake has now set. We glazed the top with raspberry flavoured glaze.
Step 5 – Eat the cake
The cake was sweet and light. The yogurt mousse was creamy but not rich and the hint of orange/raspberry flavouring was refreshing. The raspberry glaze gave the cake a nice sheen and simple decorating effect. I’d make it again.
