Baking Tune: Kristina Maria – Our Song Comes On

As I baked this week, I could not help but think how spoiled we have become with the influx of baking equipment on the market, specifically electric stand mixers. They make activities such as creaming butter, whipping cream or kneading dough so easy. As much as I adore my stand mixer, sometimes it is nice to just throw ingredients into a bowl, mix it by hand and throw it into the oven.

This recipe for lemon cupcakes was super quick to make. All i had to do was throw items into a bowl. No mixer this week!

First off, the wet ingredients – eggs, oil, fresh lemon juice, brown sugar and a little vanilla.

Secondly, the dry ingredients – flour and baking powder.

Mixing them together, carefully not to over mix.

Into the cupcake tin and then baked for about 25 minutes.

Ding! Goes the timer and we have lemon cupcakes.

Fresh from the oven, they were soft on the inside and a little crispy on top. They were sweet with a nice tang of lemon. They would taste even better with a nice lemon glaze. Perhaps next time. =)
