Homemade Dairy Free Chocolate Mousse

With some exceptions (ahem ice cream and sometimes cheese) I do not eat dairy. In doing so I have had to give up many food items that I enjoyed very much – yogurt, cheese and even pudding or mousse. Over the last few years I have been able to find some good dairy free versions of these items but sometimes they don’t taste as good as the real thing.

Once in a while I feel the need to have some chocolate mousse. I have been fortunate to find a brand of chocolate soy mousse that I really like but not all grocery stores carry it and it can be a pain to go hunt it down. It is, however, very easy to make my own chocolate mousse using 3 simple ingredients that are commonly found at all grocery stores.

All you need is some good dark chocolate which you melt over a double boiler.

While the chocolate melts, take some soft tofu and purée it until smooth and then add some maple syrup.

Pour in the melted chocolate and give it a whirl to mix.

That’s it. Chocolate mousse is done.

You can eat right away but it is so much better chilled. It firms up slightly but is smooth and creamy and light and tastes amazing with some berries i.e raspberries or strawberries!
