I spent some time over the holidays organizing my baking cupboard. I tend to buy ingredients and baking paraphernalia in excess and well, the cupboard gets a little out of control. It’s in much better shape now. Look, all my muffin and candy cups are wonderfully organized.
I had purchased some raisins initially with the intention to make some more raisin bread. That never panned out and so I had some raisins to use up. Seeing as I had an abundance of muffin cups (I then found a bunch more hidden away and not able to fit in the box) I thought why not make some muffins.
I’m on a bit of a health kick these days (who isn’t?), probably because of all the holiday eating (ok, and pre-holiday eating) I have been doing.
It was settled, whole wheat oatmeal raisin muffins would be made.
First I soaked the oatmeal with some milk and set aside while I mixed everything else together. Whole wheat flour, baking powder, baking soda, some brown sugar, vanilla, pumpkin spice (really making use of this stuff aren’t I?), an egg and applesauce into the shiny bowl.

Baked for about 20 minutes and then out they came.
No butter, no oil, very little sugar. Moist and light muffins, hint of apple, nice spice, soft sweet raisins so no need for a ton of extra sweeteners. A good snack or breakfast item. =)
