No Pasta Veggie Lasagna

The goal – eat more veggies. An option – veggie lasagna. So I made one.

Some of the ingredients – eggplant, zucchini, kale and carrots.

Now I make veggie “noodles”.

Here’s some fresh basil and shallots.

Kale, which is sautéed with the shallots, some garlic and olive oil.

Prepping the ricotta. Mixing in some of the basil.

Layering time. First eggplant.

Then ricotta and kale.

Then zucchini and marinara sauce.

Finishing with carrots, eggplant and Italian blend cheese.

The dish goes into the oven for an hour, just until the cheese begins to melt and brown.

The veggies shrink up a bit and absorb the marinara sauce , the cheese becomes gooey and hot. Check out these layers.

A hearty, filling and tasty meal. All vegetables and super fun to put together. =)
