The goal – eat more veggies. An option – veggie lasagna. So I made one.
Some of the ingredients – eggplant, zucchini, kale and carrots.
Using my new mandoline for this experiment.
Kale, which is sautéed with the shallots, some garlic and olive oil.
Prepping the ricotta. Mixing in some of the basil.
Layering time. First eggplant.
Then ricotta and kale.
Then zucchini and marinara sauce.
A hearty, filling and tasty meal. All vegetables and super fun to put together. =)
