It Started With Garlic and Ended With…

…garlic mashed potatoes and garlic stuffed meat pucks. Yes, meat pucks.

Let me put this post into context. I believe I’ve expressed my love of meatloaf as comfort food. My last few restaurant visits have involved meatloaf meals. I’ve been jonesin’ for some meatloaf with mashed potatoes and tasty gravy. It would be so easy for me to walk over and order me some meatloaf. But making it myself would be so much more satisfying.

So it began with garlic which I roasted.

I took some mini potatoes and boiled them.

20130421-200149.jpg Then the potatoes were mashed with some of the roasted garlic. About two of the garlic heads. Yep, two.




On to the meatloaf. I had a vision of using a muffin tin to create meat muffins. I took some lean ground beef, added an array of spices, Worcestershire sauce and Russian mustard.


Once mixed up, it was time to form them. A clove of roasted garlic in each.

Then into the muffin tin.

So, the baker in me wished these meat muffins had risen up high with a nice muffin top. Of course, we all know this is not the case, thus, we have meat pucks.


A side of roasted carrots, onions and mushrooms, glazed with olive oil, brown sugar and balsamic vinegar.




Nothing fancy about this meal. Sometimes simplicity is the best. I loved the sweetness of the roasted garlic in each bite of potatoes. And the roasted garlic middle made the meat pucks a tad more delectable. A splash of mushroom gravy (not shown) and tomorrow’s lunch is served! =)
