Pork Tenderloin and Roasted Veggies for Dinner

Yes, nothing complicated here.  Pork tenderloin roasted with apple butter and a mix of roasted vegetables  – squash, onions, beets, potatoes, garlic and brussels sprouts.  IMG_6508

Paired with some red quinoa to add some great texture and offset the brightness of the sweet roasted vegetables that were wonderfully caramelized.  The pork was tender and the apple butter created a slightly tart sauce.  Sometimes, I surprise myself.  =)
