How did I go for so long without knowing about this combo? Caramelized onion hummus is my current food obsession. My taste buds just go nuts for that sweet onion flavour that pops out. Here’s my attempt at caramelized onion hummus.
First, I caramelized the onions. In a pan, I poured some olive oil and once the oil was heated, I placed the sliced onions in the pan and spread them out to form one layer. It is important to let the onion sweat it out, only stirring occasionally so they do not stick to the pan and allow them to brown without burning. I had the stove on medium low heat. After about 40 minutes, I got a little impatient and took them off the heat. They could have browned more, but for this time, it was enough.
Once the onions were done, it was time to begin processing the chickpeas. Using either a food processor or blender (I used a blender), I dumped in the chickpeas, about a cup of the chickpea liquid, olive oil, salt, pepper, paprika, sumac, lemon juice, half the onion and blended. You can add more liquid or olive oil if you find your mixture a little thick.
Now, you can blend everything to whatever consistency you want. You like it on the chunky side don’t blend for too long. If you like it smoother, add more liquid and blend away. Garnish with the rest of onions and it is ready.
