Lemon curd is a thick, creamy flavourful spread made by cooking down lemon juice, eggs and sugar. The key here is fresh lemon juice and some patience.
Here’s what you’ll need:
3/4 cup sugar
1/3 cup fresh lemon juice, about 3 lemons will work
1/4 cup butter
1 tablespoon lemon zest (it’s easiest to zest a cold lemon)
