How to Make Lemon Curd

Lemon curd is a thick, creamy flavourful spread made by cooking down lemon juice, eggs and sugar.  The key here is fresh lemon juice and some patience.

Here’s what you’ll need:

3 Eggs

3/4 cup sugar

1/3 cup fresh lemon juice, about 3 lemons will work

1/4 cup butter

1 tablespoon lemon zest (it’s easiest to zest a cold lemon)


Combine the sugar, eggs, lemon juice & lemon zest in a heat safe bowl.  Place the bowl over a simmering pot of water.

Continuously stir the mixture over the simmering water.

You’ll start to notice the mixture begin to thicken.  You will want to get the temperature into the 160 – 170F range.  The mixture should have a texture like a thick salad dressing.

Once you hit the right temperature range, take it off the heat and add your butter and whisk until fully melted.

Et voila, lemon curd.

Once finished you’ll have a bright and tart custard like concoction that can be used as a dessert filling or topping or just spread on a toasted english muffin or crepe for your morning breakfast.  =)
