I had made these little snacks over the weekend and had a few people asking me for the recipe. Well here it is!
The main ingredient…Broccoli. But you could use spinach or kale if you wanted.
I chopped the broccoli florets into small pieces and quickly sautéed them in olive oil with chopped onion and some garlic, salt and pepper, until soft.
In the meantime, I cooked 1/4 cup of quinoa in some vegetable broth. I used a mix of red and white quinoa, but the choice is yours.
Mix the broccoli and quinoa together. Let cool.
Once cooled, add some shredded cheddar cheese and mix. You could use any kind of cheese, again the choice is yours. I think next time, I will use a spicy Jalapeño Havarti!
To this mixture, add two eggs and mix again.
Now the fun part. Spray a muffin tin with some cooking spray or use muffin papers to keep the mixture from sticking. Spoon the mixture evenly.
Bake in the oven, 350 degrees for about 25 minutes. When you see the edges browning, they’re done.
